Lasagna, Bread & Salad...perfect

Maren and Jake drove back to Las Vegas after a few days visiting friends in Riverside, Ca.  They had a great time ‘hanging out’ and spent some really interesting hours at the Mission Inn in Riverside watching the Angels vs. the Boston Red Sox at the bar and talking to someone that they met sitting next to them.

Maren said this guy has several businesses and also thinks up ideas, which he then patents under intellectual property laws and puts up for auction to various companies which could use his patented ideas to make a profit.  Maren talked to him about her Tweeterpreneur website  and he was interested in signing up.

I had a pan of lasagna in the freezer and since I knew there would be five of us for dinner, defrosted it and some garlic bread that I’d also frozen.

For the salad, I made an Ina Garten ‘Creamy Mustard Vinaigrette’.  Using the food processor made this super quick.  I simply combined 1 clove of garlic, ½ t. of Dijon mustard, ¾ t. of kosher salt, ¼ t pepper, 3 T. champagne vinegar and 1 raw egg yolk (I saved the white for my dog’s breakfast).  This is combined well and then ½ Cup of olive oil is slowly drizzled in.   Tangy and creamy at the same time, it’s delicious on a simple salad of greens.

The Lasagna was baked at 375 for about 1 hour with foil covering it and then baked for about 15 minutes extra uncovered to brown the top a bit.

I wrapped the bread in foil and put it in the over for the last 20 minutes of baking and it was perfect.

Our friends, Wendy & Steve, brought this wine over when they came for Sunday lunch so we opened it to go with the lasagna since lasagna demands a red wine.

Oak Leaf wine is the private label non-vintage wine marketed by The Wine Group (the box wine people) only to Wal-Mart stores.  So, Oak Leaf Vineyards (Ripon, Calif.) does not really exist as a place where they grow grapes and make the wine; instead it is a production facility of The Wine Group, Inc.   This wine is under $4 a bottle and what I would call a ‘value’ wine.  Really not bad, not tannic at all, just a decent drinkable wine at a great price.  Go Wal-Mart!
