Grilled & Roasted Baby Back Ribs

Tonight, Maren said that she & Margaret were going to go to the Hard Rock Hotel behind the Strip to buy ‘Morrissey’ tickets that were going on sale that night.

Me, “Who?”

Although I vaguely recalled the name & later found out he’s former front man for The Smiths (which I’ve certainly heard of) and now solos.  The concert is Dec. 4th at The Joint at the Hard Rock and I guess they thought the concert might sell out….thus the dash to buy tickets.

Maggie was coming for dinner, pre-ticket buying, so I decided to cook some baby back pork ribs that I had in the refrigerator.

I used a recipe from, ‘Two Dudes, One Pan: Maximum Flavor from a Minimalist Kitchen’ which involved laying the ribs out on foil, brushing them with grape seed oil and then sprinkling them with fresh thyme sprigs, parsley and smashed garlic cloves.

The foil is sealed and both packages are baked at 500 degrees for 30 minutes & then 250 degrees for about 1 ½ hours or until they are tender.000_0085

After they cooled, I turned the gas grill on and, when it was hot, carefully laid the rib slabs down and basted them with barbecue sauce.  They got flipped & basted a couple of times until they looked like…

Corn bread is a natural with ribs and I used some old cast iron corn stick molds to make mine.  These were served with soft butter.

I made a blue cheese dressing for the salad.

Last, I cooked some frozen green peas and tossed them with butter, s & p.

We drank a Hedgeline Vineyards 2007 Merlot.  Cost about $12 on sale at one of the grocery stores..I think it’s about $17.00 retail.  Anyway, it was a delicious wine; I remember berry flavors and soft tannins that were good with the sweet barbecued pork.

The girls left to get their tickets and when Maren returned told us a funny story of how the security guard didn’t want to let them in to the ticket office at the Hard Rock for fear they’d try to sneak into the Santana concert which was being held that night…Maren, unbearably irritated at having gone all the way down to buy tickets that she was now told she couldn’t buy, said heatedly, “You’d have to pay me to go see Santana!”

At which point the guard gave up and let them in.
