Who Else Wants Skinny Girl Margaritas & Enchiladas?

If you read this blog with any regularity, you probably know that I watch, with amusement & horror, the Bravo TV show franchise—–Real Housewives….of Orange County,  NYC,  NJ,  Atlanta, doesn’t matter what city or state, they are all equally addicting.

For those of you who don’t watch it—good, don’t start.  It’s tabloid TV trash.  Anyway, one of the NYC women is always talking about/drinking/promoting something called a Skinny Girl Margarita.  She’s skinny, so maybe that’s the reason.  Then two of the characters on the OC version ordered one in a bar and said how good it tasted.  Since I was having Enchiladas that night, I had to taste it for myself.

Creamy Chicken Enchiladas

The Creamy Chicken Enchiladas came from the day I made a pan for Natalie & one for myself….  What better drink to complement  Enchiladas than a Margarita?  A Skinny Girl Margarita.  Which then meant I could eat more than one enchilada.  See, there was real thought behind this.

I, of course, looked up the recipe on-line.  But the recipes that I found didn’t seem to have the true spirit of skinn-y-ness.  So, I prepared a real SGM.

Since this drink is mainly tequila, a premium tequila is called for. Corralejo Blanco is a good one that I already had.

Skinny-er Girl Margarita

So, all I used were fresh limes (always fresh), some kind of sparkling water, and tequila.

1 & ½ oz of tequila, ½ of a squeezed lime (juice press please) , ice and the sparkling water.

No sugar or  orange liquor so this drink was super skinny.  And tasty.  I was surprised that it tasted so good.  I was really expecting it to be too strong and too bitter.  But it was wonderful.

Guacamole was all I needed to make to go along with the enchiladas.  So this was an easy dinner to put together.

Enchiladas and Margaritas….what a dynamic, delicious duo!
