Each month our church’s men’s prayer group meets at our house. A time for the men to meet, share prayer requests & praises with each other, pray for each other and have a time of fellowship together.
Usually I’ll make some snacks for them and then clear out of the way for the rest of the evening. So, the food has to be something that can be prepared in advance, tasty for a bunch of guys, finger food and food that’s easily served.
This month I made Root Beer Chicken Wings, Pimento Cheese Spread and Banana Bread with chocolate and chrystallized ginger.
I mixed 2/3 cup of Root Beer with 1 Cup of Soy Sauce and about 4 cups of water in a large bowl and then added the trimmed chicken wings to marinate overnight.
The next day, I grilled them slowly at first and then when they were close to done, I basted them with a bar-b-que sauce that was laced with minced fresh ginger and more root beer.
The Pimento Cheese spread was easy. Just shredded sharp cheddar, pimentos, onion powder, Worcestershire, hot sauce and pepper. In the food processor until creamy.
These were the ingredients for the Banana Bread.
And this is what came out of the oven.
Once everything was ready—I was free to happily disappear for the evening, content in the knowledge that the ‘guys’ were going to be well taken care of.
