For 6 years, I’ve been following the TV show, Lost. 6 years of making sure that I’ve been home & in front of the television. Sometimes loving where the writers went, sometimes disgusted with the multiplying unanswered questions or stupid rabbit trails that led to nowhere.
Now, it’s over. This Sunday night, I’ll be at my friend Roe’s house, glued to their enormous screen TV, watching the last couple of hours of Lost. Fitting that ‘The End’ occur at Roe’s, since that where a bunch of us gathered for the start of each Lost season to watch the show together for years.
Food & drink are involved. That’s a given. And Roe wanted us to bring things that are tied into the show in some ways. So I went on line and started looking.
First thing I found is that a lot of people all over the US are having parties that night. Some of them far more elaborate that ours will be, with Oceanic Air Boarding Passes(which we had), miniature (think airline-sized) bottles of liquor, cookies shaped like fish (Sawyer’s fish biscuits) and luggage scattered around the room etc.
I know that Lisa is bring Klondike bars (Polar Bear) and Boar’s Head meat (Locke hunted boar on the island), I thought I’d do fried chicken and lable it with a Mr. Cluck’s lable (Hurley’s chain).
Found a recipe at Epicurious.com for Fried Chicken Bites that looks great and island-y.
Fried Chicken Bites
4 cup amber or dark rum
1/4 cup fresh lime juice
1/4 cup soy sauce
1 tablespoon sugar
1 1/2 pounds skinless boneless chicken thighs, cut into 1 1/2-inch pieces
About 2 cups vegetable oil
1/2 cup all-purpose flour
1/2 teaspoon paprika
Stir together rum, lime juice, soy sauce, and sugar in a shallow bowl until sugar has dissolved.
Add chicken and stir to coat. Marinate at room temperature 25 minutes.
While chicken finishes marinating, heat 1 inch oil in a deep 12-inch heavy skillet over medium-high heat until it shimmers.
Meanwhile, whisk together flour, paprika, and 1/2 teaspoon salt in a shallow bowl.
Drain chicken and pat dry. Dredge in flour, shaking off excess, then transfer to a plate.
Fry chicken in 3 batches, turning occasionally, until deep golden brown and cooked through, 6 to 7 minutes per batch.
(If chicken darkens too quickly, reduce heat.) Transfer to paper towels to drain.
Accompaniments: lime wedges; hot sauce and I made a Ranch Dressing to go in the center.
I also made a fresh fruit salad (They’re on an island, right?)…..
