My Favorite Crab Cakes—Maryland-Style

It seems like I’ve been on a ‘crab roll’ lately.  What with crab truffles, decadent crab pasta, and crab cakes, it’s been a crab-a-licious month.  And why should it end?    Tonight on our menu—Maryland-Style Crab Cakes.

Favorite Crab Cakes

I had a fresh lb of refrigerated pasteurized lump crab from Costco.  So I opened it and started putting together the rest of the ingredients and smelling something…..odd.  Yep, it’s the crab.  The just opened crab whose ‘consume by’ date was four months away smelled.  Darn.  Of course, the good thing about buying anything at Costco means that you can return it with no receipt.   But that still left me with no crab.

Dear Vic went to Whole Foods and saved the day…or at least the dinner.  He bought two foil packages of fresh crab, about 7 oz each for almost twice the price of Costco.  But, when I opened the packages—–a sweet, fresh ocean-y smell wafted out.   Mmmmmm.

I’ve made this version of Crab Cakes dozens of times so it was easy…the recipe (which I cut out from “The Chronicle”,   years ago) is simplicity itself.

Favorite Crab Cakes

Mix together:

1 cup mayonnaise

1 T & 1 t. Dijon

1 cup crushed Saltines

1 lb. Crab

Combine Crab with Rest of Ingredients

Combine.   Form into small rounds and coat with 1 cup (or more if needed) of crushed Saltines.

Shaping the Crab Cakes

Heat a couple of Tablespoons of oil in a large skillet until hot.   Gently fry crab cakes on both sides .  If you’re frying in batches, keep the finished cakes in a warm oven.

A simple green salad is all you need to round out the meal.

Crab Cakes & a Salad

Drinks?  Wine would be delicious, a full-bodied white wine with citrus-y  flavors.  But, I wanted a Lemon Drop.

This recipe makes the best Lemon Drop I’ve ever tasted.

Simply vodka, a lemon and simple syrup.

The proportions are :

Lemon Drop

2 oz vodka

1 whole lemon squeezed

1 oz simple syrup

This is shaken over ice and strained into a chilled glass, then garnished.

So, so good.  And actually, perfect with the Crab Cakes.  Which are the best….sweet, crispy with plenty of meat.  This is my favorite version of crab cakes ever.
