Cocktails and Chaource Lincet

When friends come by it’s so nice to have something special to share.

The other night when friends stopped by, I happened to have a whole cheese in the refrigerator that I had picked up at Costco.  The thin wooden container was so cute and the smell coming from it was so delicious-even chilled the way it was-that I had to try it.

So it sat in the refrigerator at home until somebody stopped by.  Then I was able to pull it out and let it sit at room temperature (because cheeses always taste better that way) while I put together our cocktails.

I decided to do Stork Club Cocktails again.  I had made them for the first time a few night earlier and I loved them.  Really simple with a clean, classic taste.  Gin, Cointreau, orange, lime, orange bitters and ice.

This is a great retro cocktail. You taste sunny citrus juices, plus a little extra orange flavor and sweetness from the triple sec. But the gin and bitters added a pleasant sting to the sweet orange/lime flavors.  The traditional Stork Club is made with Angostura bitters so in case you don’t have any Orange bitters (I used Fee’s) just use Angostura.

Stork Club Cocktail

To make one cocktail:

  • 1 1/2 oz Gin
  • 1/2 oz Triple Sec
  • 1/4 oz Fresh Lime Juice
  • 1 oz Fresh Orange Juice
  • 1 Dash Angostura® Bitters

Shake well with cracked ice and strain into a chilled Martini glass.  Garnish with a Orange peel curl.

The box tells us to serve the Chaource with spoons to dip into the soft almost runny cheese so we did.  This cheese comes from the Champagne region of France. Actually, this cheese would be terrific with a glass of Champagne.  It is made from pasteurized cow’s milk, is soft-ripened with an edible, bloomy rind and has a 50% butter fat content. While not aggressively stinky, the cheese has a light pungency reminiscent of earthy mushrooms.  And it’s incredibly rich tasting.

I did have some slice baguette on the side, but we mostly just dipped with our spoons, savored the flavor and sipped our refreshing Stork Club Cocktails.
